Kahvi jota Kalle Freese käytti World Barista Championship kisoissa, ja hyvin käyttikin (sprudgelive) . Koskaan ei ole Suomi vielä menestynyt noissa kisoissa niin korkealle. Semifinaaleihin pääsi 12 maata, joista Suomi yksi, lopulta sija 9.
Kallen esitys oli mielestäni pirun kova, niin se oli kyllä kaikilla 12 kilpailijalla (vähän Ranska yllätti finaalipaikallaan, ei siitä enempiä), mutta kahvia piti päästä maistamaan, sillä onhan se nyt se millä kisataan.

En ole vieläkään saanut sitä espressoksi asti, ja joudun luultavasti tilaamaan uuden pussin, sillä tämä on aeropressilläkin niin turkasen hyvää.

Enpä nyt tuosta viimeisestä niin tiedä, mutta muuten osuva.
Kahvin takana on vähän enemmänkin, laittaisin linkin sivuille, mutta olen huomannut että kun häsällä vaihtuu pavut, niin linkit menevät tyhjille sivuille. Siksipä tylysti pastean tähän tekstit:
“Grown in the Viphya north hills on the grassland plateau overlooking lake Malawi, this micro lot is a mix of Nyika (which is a dwarf hybrid of Catimor 129, developed in Malawi) and the much-prized Geisha varietal. Geisha is an ancient and very rare coffee variety that has gained a lot of favour of late, but it’s very low yielding and vulnerable to disease and pests. The Nyika is the opposite; high yielding, hardy and strong, but Catimor is less desirable to the coffee buyer who doesn’t taste it.
Luckily, this coffee was part of a competition called the Taste of Harvest (ToH), where the lots are all cupped blindly. It’s a competition that is held in a few African countries, and the coffee won outright for Malawi.
The farm is located on the Viphya plateau which is in the eastern part of the Mzimba district, in northern Malawi. It’s approximately 85 km south of Mzimba town, and 165 km south of Mzuzu (the regional capital).
After pulping, the coffee is fermented underwater (using clean water from local rivers) for 12–36 hours, in order to remove remaining mucilage. Post-fermentation, coffee is washed and graded in sorting channels. The processing water is redistributed into seepage pits.
Parchment is then placed on pre-drying beds for 2–3 hours, until any surface water has evaporated, before being transferred to African raised beds in layers of 3–5 cm. The parchment is turned regularly in order to prevent it cracking, and it’s covered during midday heat to ensure uniform drying. The coffee is removed from the drying tables when moisture levels reach 10.5–11%, and is finally placed in conditioning bins in the parchment shed.”
Tuossa lajikkeista, farmin sijainnista ja prosessoinnista. Tarkkaa on, hyvin mielenkiintoista sekä ihan basic brassi bourbonille hyvää vaihtelua.
